The Vineyard is 18.5km from the coast, something that’s significantly reflected in the wine’s aromatic profile. The Vines are grown in shallow topsoil above weathered granite hillside. After hand harvesting the grapes, the wine is split into 70% fermented in stainless steel, 30% fermented in neutral French oak, with 11 months on lees. This work in the cellar allows the wine to develop complex flavours, aromas, and texture. This wine has an aging potential of at least 6 years.
